Anises Sticks


Anise Sticks – Print This Recipe



Yield: 180 sticks

•Heavy cream 160 g/6 oz/20%
•Glucose syrup 50 g/2 oz/6%
•Milk chocolate, unmelted, tempered, chopped 570 g/20 oz/69%
•Pernod or other anise liqueur 40 g/1.5 oz/5%
•Batch Size 820 g/29.5 oz/100%
•Milk chocolate, tempered, for precoating and dipping as needed


1.Combine the heavy cream and glucose syrup in a saucepan. Bring to a boil.

2.Pour the hot cream mixture over the chopped chocolate and let sit for 60 seconds, to allow the chocolate to melt.

3.Using a spoon, stirrer, or spatula, stir the mixture in vigorous small circles in the center of the bowl until it emulsifies.

4.Stir outward in larger circles to spread the emulsion throughout the bowl, checking to see that all the chocolate has melted. If necessary, place the ganache over a warm water bath (not exceeding 34°C/93°F) to melt the chocolate.

5.Stream in the liqueur, stirring until the mixture is homogeneous.

6.Pour the ganache into a hotel pan, covering the bottom of the pan with a thin layer. Place plastic wrap directly on the surface of the ganache. Allow the ganache to rest at room temperature until slightly firm and of a plastic consistency. This may take 1 hour, depending on the ambient temperature.

7.Agitate the ganache lightly by placing it on a marble slab and working it gently to induce crystallization.

8.Using a No. 3 tip, pipe cylinders of ganache the same diameter as the tip across the entire width of parchment paper. Allow to crystallize at room temperature until firm enough to handle, about 20 minutes.

9.Using a small brush, precoat each cylinder of ganache with the tempered milk chocolate by brushing one side, allowing the chocolate to set, and then rolling the column over and brushing the other side.

10.Cut the columns into 2" lengths.

11.Using a 4-prong dipping fork, dip the sticks into the tempered milk chocolate, then place them diagonally onto an icing screen.

12.Allow the chocolate to set to the point that it will hold a peak when touched.

13.Roll the sticks lightly on the screen, remove them immediately, and place them on parchment paper.

our "NEW" pets

the logs on the front porch were all knocked over one morning, and my husband says "what on earth happened here?". we thought the cats had been playing, but we found out differently a fw days later.......
my husband now has new pets....he has taken to feeding them little peanut butter balls rolled in corn flakes....I think that he has opened up a whole new can of worms..... *SIGH*

*** A WORD FROM THE KITCHEN ***

Halloween is finally on a weekend we'll have more timeto do fun stuff with the kids...now if only the weather will be nice for them. This is a great time to try somenew cold weather drinks like hot ciders and homemade hot cocoas. I've included a flavorful HOMEMADE VANILLA COCOA version below and you can try substitute cinnamon too. I know of people who add other things like peppermint schnapps too but I like to enjoy it with the kiddies. Another great thing to try with apple cider being so plentiful right now is a super quick fix. Just microwave in a mug with a cinnamon stick for a few minutes and you've got yourself a treat. Kids love this too and can use the cinnamon stick as a straw.... just don't let them eat it.

RECIPE: HOMEMADE HOT VANILLA COCOA *~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*
INGREDIENTS:
1 quart milk
1/3 cup sugar
1/4 cup cocoa
1/4 teaspoon vanilla (or 1/2 teaspoon cinnamon)
whipped cream for topping

DIRECTIONS:In saucepan, combine sugar and cocoa. Add a few tablespoons of milk and heat over medium high heat, stirring constantly. The heat will make it easier to dissolve the cocoa. When the sugar,cocoa and milk have formed a paste, add the remainder of the milk plus the vanilla or cinnamon and heat until steaming. Pour into mugs, top with a bit of whipped cream and serve immediately.

Yield: 4 servings

Richard Dreyfuss says it's taken half his life to understand having bipolar disorder.
The Academy Award-winning actor was speaking frankly on the red carpet before hosting the 2009 Voice Awards at Paramount Studios in Hollywood, aimed at promoting awareness and understanding of mental health issues.
"It took me half my lifetime. People should be more patient, empathic, sympathetic and not fear what they see in others," the Jaws star explained.
He added: "How bad has my condition been? It's been my best friend and my worst enemy, it's been more fun than a barrel full of monkeys and I can't see a difference between it and me. There is no difference."
The 61-year-old continued: "I have a problem with the whole phrase 'mental health problem'.
"I think mental health problems are mistreated children, lying to your wife and illegal wars - torture, that's a mental health problem. We should learn to understand something before we stigmatise it.
"I'd like to see more public figures talk honestly about anything. I'd like to see villains put in jail and heroes praised. I'd like to see some common sense brought back into public life, of which there is none!"

egg drop soup

Egg Drop Soup

6 cups chicken broth
2 tsp. salt
2 Tbsp. water
2 Tbsp. cornstarch
2 eggs slightly beaten
One quarter cup green onions, chopped

Heat chicken broth in a large pot until boiling, add salt. Combine water and cornstarch and stir until mixed. Pour in water/cornstarch and stir over medium heat until mixture starts to thicken. Slowly pour in beaten egg and stir. Remove from heat and pour into soup bowls. Sprinkle green onions on top and serve. You may want to add crisp noodles and/or soy sauce to the soup.

The Skinny: Use fat free chicken broth and your favorite egg substitute.

Cashew Chicken Stir Fry

2 Tbsp. vegetable oil
1 pound boneless chicken breasts, cubed
1 onion, chopped
2 ribs celery, chopped
One third cup rice wine or dry sherry
One third cup soy sauce
One quarter cup cornstarch
1 Tbsp. fresh ginger, grated
1 6-oz. can water chestnuts
2 cups Chinese cabbage, (bok choy) chopped
1 cup bean sprouts fresh or canned
One quarter cup hoisin sauce
One third cup cashews

Heat oil in skillet or wok. Cook chicken until no longer pink and set aside in a bowl. Add onion and celery to skillet and cook until crisp-tender. Combine rice wine or sherry, soy sauce, cornstarch and ginger together and stir until cornstarch dissolves. Return chicken to celery and onion in the skillet and add water chestnuts and sauce. Cook until sauce starts to thicken. Add Chinese cabbage and bean sprouts and cook for just one or two minutes; do not overcook because the cabbage will become mushy. Stir in hoisin sauce and cashews and serve over hot rice or noodles.

On February 17, 2006, in a speech to the Council on Foreign Relations, Defense Secretary Donald Rumsfeld spoke of the harm being done to the country’s security, not just by the enemy, but also by what he called “news informers” who needed to be combated in “a contest of wills.”

In 2002 Attorney General John Ashcroft announced his desire to see camps for U.S. citizens deemed to be “enemy combatants.”

THE SOLUTION

A Defense Department document, entitled the “Strategy for Homeland Defense and Civil Support,” has set out a military strategy against terrorism that envisions an “active, layered defense” both inside and outside U.S. territory. In the document, the Pentagon pledges to “transform U.S. military forces to execute homeland defense missions in the . . . U.S. homeland.” The strategy calls for increased military reconnaissance and surveillance.

The Washington Post reported on February 15, 2006 that the National Counterterrorism Center’s (NCTC) central repository holds the names of 325,000 terrorist suspects, a fourfold increase since fall of 2003. A Pentagon official said the Counterintelligence Field Activity’s TALON program has amassed files on antiwar protesters.

Shortly after Bush orchestrated 9/11, he issued "Military Order Number One", which empowered him to detain any noncitizen as an international terrorist or enemy combatant. Today that order extends to U.S. citizens as well.

RECIPE: EASY KEY LIME PIE

*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*~*

INGREDIENTS:
1 cup graham cracker crumbs
3 tablespoons white sugar
5 tablespoons butter, melted
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
3 eggs
1 pinch salt
1 pinch cream of tartar
1 (14 ounce) can sweetened condensed milk
1 cup heavy whipping cream
1 lime

DIRECTIONS:
Preheat oven to 325 degrees.

Mix graham cracker crumbs with sugar and melted butter.

Press into 9 inch pie plate and bake for 5 minutes.

Remove from oven and let cool.

If using fresh fruit, squeeze into a measuring cup to get 1/4 cup of juice
from each.

Separate 2 of the eggs, placing the two egg whites into a mixing bowl.

Reserve the yolks in another bowl. To the yolks, add one whole egg, 1/2 cup juice and sweetened condensed milk.

Mix well.

With clean mixer blades, beat the egg whites until stiff, but not dry, adding cream of tartar after about 20 seconds.

Fold whites into filling mixture.

Pour filling into partially baked crust.

Bake in preheated 325 degrees for 10-15 minutes or until set.

Let cool at room temperature, then freeze 4 hours to overnight.

Right before serving, whip cream to form stiff peaks.

Serve decorated with whipped cream and lime slices.

my son and i were at his new therapist's office and we were playing with a plastic slinky.

i got in the bed at a reasonable hour-just a few minutes before 10 pm, but couldnt go to sleep, so i thinki tossed and turned several hours. i'm trying to get in the bed early because since my on is home from rtf, i get up with him in the morning.

well, we just moved here about 2 months ago, so i think i'll stay here awhile. it is beautiful here.

hmmm, i think last year would've been the first-a romantic time with my then future but now present hubby!

the crazy hospital meme

1. What is the strangest thing that has ever happened to you in a hospital (besides your illness)? Not enough towels? No condiments? Can't get your favorite channels? Come on, you can tell me. **Or....maybe this answer doesn't involve you being the patient.**
i worked in a hospital in the kitchen as a cook, and my daughter was a candy striper. my ex husbands father was upstairs and dying, and after i clocked out, we rode one of the service elevators up to visit him. i had TERRIBLE gas and had to fart and darned if the elevator didn't stop at the next floor where two nurses with a bed got on. my daughter came to stand next to me, and turned to me and said "oh mom". i pretended not to know what she meant and said "what?"

pushed the floor button and the other came to stand NEXT TO ME (!!) and immediately said "whew what is that" and went back t stand by her friend at the elevator buttons. her friend said "whats wrong" and of course she had to tell her about the awful smell from our side of the elevator....they both looked at me, and i said "that was on here when we got on downstairs"
the nurse that had fled from my side said "yeah right, that smells like something we've smelled that in some of the patients rooms"
darned if the didn't get off on the same floor we were going to, and low and behold, there was some girls from housekeeping right at the doors. the nurse that fled from my side said "oh great! you guys need to spray some powerful air freshener on here before the door closes". on of the housekeeping girls said "why, whats wrong" as she stuck her head in the elevator whe immediately retreated and said "oh my god, what IS that?", put a wet floor sign in the door to keep it from closing and grabbed the odor neutralizer
i said "i don't know, but it sure is bad" as my daughter and i escaped down the hallway to see my ex-father in law
i was so embarassed

2. If you had your choice of IV cocktails, what would you choose? demerol-i had that with both my kids and i slept between contractions. it was wonderful


3. Tell us your funniest hospital story. see #1 above. other that that, we sure had some wonderful times at the breakfast and lunch tables. i sure had some wonderful co-workers


4. Do you have any hospital phobias? no. i've been in to have my kids, have had open-heart surgery, had my gall-bladder removed, and i have to say that i had WONDERFUL nurses-the care was phenomenal-i would recommend that hospital to anyone

5. Imagine you are in bed trying to get some sleep after a long night of interruptions by the nurse on duty who would NOT stop waking you up to see if you were asleep...It is 3am. You finally get to sleep. She comes in at 3:15 and wakes you up again. What happens next? i'd ask her if im NOT supposed to get any sleep? if i'm not, i'd try to stay awake. i'd let her know that she keeps disturbing me. biatch.


6. You are stuck in the elevator with an attractive person of the opposite sex. You notice there is no wedding band. Do you strike up a conversation? If so, what is the first thing you would say? probable just something about the weather or the elevator ride
