With a heart to help others and a generous spirit, Joe and Linda Wingo founded Angel Food Ministries in 1994 to provide food for friends and neighbors who were struggling financially. Today the Angel Food program now is helping provide food relief to more than 500,000 families each month.

A field of golden dandelions is a spectacularly beautiful sight. Dandelions also are a treat for the body and mind. The greens are loaded with healthy vitamins and minerals. Here is a recipe for dandelion greens that my family enjoys with baked potatoes.

1 large onion, chopped
1 pound bacon or sausage, cut into small pieces
2 tbsp olive oil
Bunch of dandelion greens, cleaned and cut into 1-to-2-inch lengths
2 tbsp unsulphured blackstrap molasses
Salt and pepper to taste

In a cast-iron skillet, brown onions and meat in the olive oil on medium heat. Add greens, molasses, salt and pepper, then stir and cover. Reduce heat and stir occasionally, cooking until the meat is done. Serve over a baked potato.
